Use any favorite vegetables side dish recipe in this section such as mushrooms and peas, sautéed okra, spinach and potato, or cauliflower and potato. Add one carton (1 pound) of fresh or frozen tofu, drained and cubed, to the vegetables as they are cooking. Cook until the tofu has taken on the flavor of the spices in the dish (15 to 20 minutes). This can be served over rice or millet as a main dish by itself, or with Spicy Buttermilk), or BUTTERMILK CURRY as a sauce. |
